This product was created over 2,000 years ago, dating back to times when the Phoenicienas and Romans passed through the Algarve region of Portugal.

In the beggining, fish salting was mainly used to extend its shelf life, however it was soon realised that one could make delicacies using such a process.

Thus Tuna Muxama was discovered, the delicacy of Kings and nobility of ancient times.

The term Muxama derives from the arabic word 'Musama', meaning 'dry'.

ALL MED GOURMET MUXAMA

Production of Muxama was resumed at the end of last century, being produced in the lands where it first originated - Vila Real de Santo António, Algarve in southern Portugal.

ALL MED GOURMET has recreated this product and sells it today to a diversity of regions around the world. The production of Muxama still preserves the same techniques once used.

PRODUCTION OF MUXAMA

Only the best tuna loins from the Atlantic Ocean are removed and salted with sea salt, through a process called 'brine', after which give them a natural flavour and colour similar to the original tuna. After cutting them into slices, we proceed to their immediate packaging into glass jars, filled with portuguese virgin olive oil.

Production time is aproximately 18 days, which follows the original production techniques.

COLOUR AND TASTE THAT AWAKENS THE SENSES

Muxama does not need any side dishes however throughout time, a few recipes have been created by civilisations connected to the fishing of tuna. On its packaging, ALL MED GOURMETpresents the first recipe that ever existed mixing Muxama and Olive Oil.

It is a product of excellence to be accopanied by a good wine and to be tasted slowly, in order to enjoy its distinctive flavours.
